One goal that I am trying to achieve is to increase my power/weight ratio through weight loss. When I have a training day that does not require too much calorie intake, a go to meal is a nice bowl of nutritious soup.
This soup is one of my Wife’s favourite soups and I must admit, despite the colour, it tastes fantastic. This soup is full of pure vegetable goodness and definitely helps towards getting your 5, or 9 a day – I can’t keep up with what the national guidelines are now 🙂
Whilst we are not a vegetarian household, we do try to make healthy substitutes wherever possible. This soup has a fab cheesy note to it thanks to an amazing product called ‘Nutritional Yeast’ making it taste a lot more naughty than it is. A real comfort food on a cold dull day. Our soup looks a lot greener than when it was first cooked as my wife likes to add a teaspoon of spirulina and also a sprinkling of dried seaweed just before serving for an extra nutritional boost.
The recipe for this soup is as follows:
- 1 medium white onion
- 500g brussels sprouts
- 120g tenderstem broccoli
- 2 sticks celery
- 2 garlic cloves
- 1 red chilli (optional)
- 1 litre vegetable stock
- salt/pepper (to taste)
- 100ml almond milk (optional)
- 1 cup nutritional yeast
We put all ingredients into our soup maker for 21 minutes (smooth setting). If you do not have a soup maker, then you can put all the ingredients into a pan, cook until all vegetables are tender, then blitz with a hand blender. We like to add plenty of ground chilli flakes and black pepper to serve.
I am probably the worlds worst when it comes to eating at breakfast time. Luckily I have a Wife who is into healthy nutrition and clean eating to help me out.

Oat and Puffed Rice Granola Bar
These were easy to make, but found it easier to put the dates in to the food processor first, as if combined with the almonds, the almonds ended up too small and dusty. I also added dried cranberries for a sweet hit. They taste as good as they look. Although I am using them for breakfast, they would be great anytime of the day for a nutritional pick me up.
From my experience I ran park run and on the 3 or 2 loop I kept on saying to myself RUNNERS NEVER QUIT over and over again. But the one reason I did it was so I could prove myself to my friends and family and I did finish.But if your not used to it you may want to train before you do a 5k run. I had massive pain in my legs and could not walk properly. But if you do a 5k run you might want to run with someone like I ran with my Daddy and my dog Max. And because I am only 9 I do not really run that much because of school. But for adults you have more time then children so you can mark when to train on school days. Just in case you want to go Park Run is mostly on Saturday.But you must remember RUNNERS NEVER QUIT!!

Today is a day of many firsts. First day of 2016; first proper day of my training blog; first Park Run of 2016; first time that my daughter ran with me on a park run; first time my daughter has ever run 5km!
My daughter Ana and I were joined by 601 other inspired individuals at Ferry Meadows Peterborough Park Run this morning. As it transpired, many who ran Ferry Meadows had come over after completing Huntington Park Run (obviously 5km on New Years Day was not enough).
My original plan was to have this as an easy run today followed by a threshold run tomorrow. All that changed when Ana asked me if she could run with me today. I must admit, I was a bit dubious. Ana had never run that far with me before. Although always keen to come training with me, Ana has never really run more than a couple of km before.
The Ferry Meadows Park Run route incorporates one small and two larger loops. My initial thoughts were that Ana may run the first loop and then ask to finish. How wrong was I. She inspired me all the way round. Never giving up despite being tired. At one point I noticed she was talking. When I asked what she was saying, she replied “Just telling myself that runners never quit”.

Tomorrow will be the first Park Run of 2016. Who will be there? Expecting a good turn out at Ferry Meadows, Peterborough. 511 runners on New Years Day 2015. Sure that will be beaten this year. See you at 1030 #PeterboroughParkRun
