Cauliflower Pizza Virgin

Right, I gotta confess folks I had never tried this new phenomenon of cauliflower pizza. It was always on my list of things to make but I never got around to it. That is, until, today!! I must admit that in my naivety I thought the magic would happen and it would taste like pizza dough just without the carbs, gluten and fat, duh, silly me I know. It did taste amazing though and I will definitely be making more of these in the future. I made a roasted pepper, tomato and basil paste and topped with onions, olives, cherry tomatoes, mozzarella cheese and rocket. A fab substitute to traditional pizza, and something I could definitely get used to. I followed this recipe for the base by Madeline Shaw

ย Roasted Pepper, Tomato and Basil Paste:

  • 1 Jar Roasted Red Peppers
  • 1 can of chopped tomato (juice drained off)
  • 1 bunch fresh basil
  • 2 garlic cloves
  • salt/pepper to taste

Blitz all ingredients together (I used my Nutribullet). You get plenty of paste, so I used some and froze the rest.ย  Would make a great base for pasta sauce.
