Post Training Breakfast


I know that I have posted before about my lack of interest when it comes to eating breakfast, so I thought I would share my new favourite post training breakfast.  Now, I am very fortunate that I have a job that I am able to cycle commute to and from.  This means that I get over 3 hours of bike time every day (no jealousy comment please :)).  To enable my body to allow me to do this along with all my other training (yes, I do manage to squeeze some work in occasionally :)), I have to ensure that I give myself a fulfilling breakfast.

I have decided on scrambled egg with spinach and home made meat balls.  I find that this meal gives me bags of protein and stops me getting hungry, so that I don’t snack before lunch.  I try not to snack before or even after lunch as I am trying to reduce my body fat.

This a simple recipe consisting of:

  • 3 large eggs – scrambled
  • large handful of spinach
  • 4 small homemade meatballs made from lean steak mince.

Cook the meatballs and drain any fat that comes off.  Add the spinach to wilt, then add the scrambled eggs.  Cook to your liking.  I add hot sauce for that extra kick.

Definitely hits the spot after a great bike ride.
