Another good day here. Managed to have breakfast out with the husband today as he had a day off 🙂 We headed to one of our favourite eateries and I had my usual lounge eggs, toasted muffin (un buttered) topped with smoked salmon and poached eggs with spinach and hollandaise on the side. A good simple, protein packed nutritious breakfast. It was a busy day and ended with a parents evening, so a quick nutritious dinner was needed. We opted for salmon with chilli and ginger and sauteed courgetti, delicious 😀
Salmon with chilli and ginger – serves 4
- 4 Salmon fillets
- 1 Red chilli finely sliced
- 1 garlic clove crushed
- Thumb sized piece of ginger grated
- 2 tbsp Tamari
Place salmon fillets on a backing tray and in a bowl mix all other ingredients. top salmon with mixture and grill on a medium setting for 15 to 20 minutes.
For the courgetti. Spiralize 2 large courgettes and saute in a frying pan with frylight a crushed clove of garlic, salt and pepper until soft.
